This is a list of all of the bodyguards in the game, their stats and the lowest price that you can pay to hire them.
Bodyguards can be found in salons in the game. Salons are marked on your map. If you don't like the selection of bodyguards available when you enter a salon, you can ring the bell and change bodyguards for a fee.
A note about the dog bodyguards: If you have one of the dogs as your bodyguard, you won't be able to enter the Pirate Hideaway with him since the pirates are afraid of dogs.
Some notes about bodyguards in the game and their AI types:
Small bodyguards are the cheapest to hire, they have the lowest strength and defense. The advantage of having them is that they can fit through bombed holes in dungeons that Tingle or any of the other sized bodyguards in the game can't fit through.
Medium bodyguards are a bit more expensive, but will last longer for your money than the smaller bodyguards. Their ability is that they can pick locked doors in dungeons that you can't find any keys for.
Large bodyguards are the most expensive, but can survive much longer than medium and small bodyguards. In dungeons, they can help you lift large stones that are blocking the way.
Keep each sized bodyguards ability in mind when you spot such obstacles in dungeons. These areas that you can't get to without bodyguards usually have treasure chests that contain rupee goods or other valuable items.
Each bodyguard has one of three AI types.
Lazy types won't battle enemies unless you move your fight cloud into them. They won't fight even if you blow your whistle and point an enemy out to them. You have to move a battle to them.
Combative types will attack any enemy in sight regardless of their energy level.
Smart types won't battle enemies unless you direct them to or they'll come to Tingle's rescue if an enemy attacks you.

Drifter Bodyguards
There are three drifter bodyguards in the entire game - Teddy Todo, Yamori, and Ronny. You meet each one of them throughout the game and get a chance to make contracts with each one of them. Once you are able to make a contract with them, you have to find them on any one of the different islands and negotiate a price with them. You only get one chance to negotiate with them when you find them. If your offer is too low, they'll go into hiding again and you have to find them to hire them. Unlike bodyguards that you hire in salons who are only able to assist you in the continent where you hired them, drifter bodyguards can travel to any of the three continents.
You can't use potions on drifter bodyguards and once they run out of health, they'll sit right where they are and you'll have to find them again to rehire them. You can't pay them on the spot like normal bodyguards when they run out of health. They also won't enter the salon area with you. If you try to enter the salon, they say that they'll leave you so you can enter it, but they won't refund your rupees.
Drifter bodyguards are the only way you can defeat Baron on Mount Desma. No other bodyguards can beat him. You get a different story and different rupee reward depending on which drifter bodyguard you beat Baron with.
You first meet Teddy Todo in the Hero's Shrine and after the Insect Cavern, he'll allow you to make a contract with him. He'll give you a discount the first time you make a contract with him since you've helped him out. If you want to hire him again later on, you'll have to pay his regular price. I'm not certain of the prices to pay for him.
You'll find Yamori on the different islands throughout the game. Just look for his not-so-hidden scroll. After you find him in Deku Forest (and in previous areas), you'll be able to make a contract with him the next time you see him.
To be able to make a contract with Ronny, on Gooey Swamp after the pirates leave a raft for you (this is after you help them out a second time which isn't until you're able to get to Mount Desma in the game), use the raft and head to the right past the pier to the next screen. There you'll find Ronny meditating on an island. Speak to him and show him enough rupees (you'll get them back) to convince him to work with you. If you offer him enough, he'll allow you to make a contract with him the next time you find him.
